It used to be called elbow grease–I'd use one of those green scrub pads, with dish soap or maybe cleanser. SOS pads good too. No, they won't be so shiny after you use an abrasive, but they won't be so shiny after you cook with them for a while either….by the way, why are you putting oil on the inside of stainless steel pans? I can see no reason to do that, and it might be what's discolouring them since oil will turn brownish when it gets hot and dries on a pan. You put oil on cast iron so it won't rust, but stainless doesn't rust.
